Homemade almond milk

This is a recipe for homemade almond milk, but you can prepare plant milk from any nut, e.g. hazelnuts, cashews, pistachios or peanuts. What is more – If you don’t have a slow juicer, you can use a blender.
If you use a juicer with replaceable strainers, use a strainer with the smallest holes to prepare milk from nuts.

How to prepare almond milk?
Water – you don’t have to pour hot water over the nuts. The almonds will soak for many hours. So you can easily juice them and peel them, even if you pour cold water over them.

Proportions:

  • 1 cup of almonds and 4 cups of water (1:4) – very thin milk, watery taste, very slight almond flavor. From these proportions I obtained 900 ml of milk and approximately 130 g of pulp.
  • 1 cup of almonds and 3 cups of water (1:3) – approx. 700 ml of milk.
  • 1 cup of almonds and 2 cups of water (1:2) – approx. 500 ml of milk.
  • 1 cup of almonds and 1 cup of water (1:1) – approx. 300 ml of milk. Thick plant milk, in my opinion, has a consistency most similar to cow’s milk.

The consistency also depends on the length of soaking, i.e. how much water the almonds absorb.
Homemade almond milk has no particular flavor. So it’s worth adding something to it that will spice it up.

Recipe modifications:

  • Salt – you can add salt to drinking water or plant milk to enrich it with electrolytes and minerals. The best one is the unrefined one. Remember, however, that excess salt is unhealthy. If you eat a lot of processed food and use a lot of salt in the kitchen, it is better not to add it. Salt also enhances the flavor.
  • If you want to sweeten your milk, you can add dried fruit, e.g. dates, raisins, apricots or sweet syrups, e.g. maple, date or honey.
  • If you want the milk to have an intense marzipan flavor, you can add a few drops of almond oil (aroma).
  • If you don’t care about vegan milk, you’re not looking for a milk substitute, but you want to enhance its taste, you can put almonds previously soaked in water into the juicer/blender and instead of pouring water, pour cow’s milk.
  • If you want to get almond chocolate milk, add cocoa powder to it.
  • Spices – to change the taste of milk, you can also add cinnamon or vanilla to it (e.g. sugar with real vanilla or cut the seeds from the vanilla pod yourself).
  • You can prepare golden almond milk, a healthy drink perfect for colds with lots of antioxidants, just mix the milk with turmeric, cinnamon, ginger, honey and black pepper.

What to make with almond milk?
Not sure what to do with excess almond milk? Here are some ideas of what you can do with it:

  • add to coffee
  • addition to shakes, fruit or protein cocktails
  • panna cotta – just add some agar or gelatin
  • cereal with almond milk
  • oatmeal with almond milk
  • replace cow’s milk when preparing e.g. pancakes, cakes, cookies, etc.
  • cocoa
  • “milk” shake with ice cream

What to do with almond milk pulp?
From squeezed, crushed almonds you can make, for example:

  • almond flour, from which you can make, for example, macaroons (just dry the pulp in the oven (approx. 50°C) or outdoors in summer).

  • Raffaello porridge with almond milk and almond pulp
  • marzipan

What to do if the almonds do not peel easily?
If you want to peel the almonds before squeezing them and they do not peel easily despite soaking, pour out cold water and pour boiling water over the almonds. Once the water and almonds have cooled down they should be very easy to peel.

The almond milk recipe is suitable for vegans and vegetarians. Almond milk does not contain gluten or lactose.

Homemade Almond Milk From Slow Juicer Recipe

Ingredients
 
 

  • 1 cup almonds
  • 1 to 4 cup water (preboiled, at room temperature or filtered)

Instructions
 

  • Cover the almonds completely with water and leave to soak overnight (approx. 12 hours) or at least 2 hours. If you want to use the pulp to make white almond flour, you need to peel the almonds. If you don't care about the pulp without the skins, I recommend leaving the skin on because it contains flavonoids and other phenolic compounds that have antioxidant properties. And besides, it's much faster without peeling ;).
    1 cup almonds, 1 to 4 cup water

Version I (peeled almonds)

  • Peel the soaked almonds. The almonds should pop out of the skin easily. Drain the almonds. Pour 4 cups of fresh water over peeled almonds. Pour this mixture into a juicer and squeeze the juice from the almonds. Enjoy!

Version II (almonds with skin)

  • The faster version because it does not require peeling. Drain the soaked almonds with their skins and pour fresh water over them. Put the almonds with fresh water into the juicer and squeeze the juice. The milk is ready.

Version III (without juicer)

  • Blend the soaked almonds with fresh water in a blender as for a cocktail or smoothie. Then strain the liquid through several layers of gauze or a cloth. The milk is ready and you can use the pulp remaining on the cloth.
