Almond pulp cookies from a squeezer

A quick and easy recipe on how to use almond pulp, i.e. the waste left after making homemade almond milk. If you want to know how to make almond milk yourself, check out my recipe.

Pulp from almonds or other nuts can be used in many ways, and one of them is delicious cookies! These are not macaroons. These cookies are soft, although they look like shortcrust cookies, their consistency is more like sponge cakes. Almond cake works well not only in the form of cookies but also as a base for cakes, e.g. with cream and fruit, or with jelly.

Although I used pulp from a slow juicer to prepare them, you can also bake them without a juicer and without almond milk.

Recipe modifications:

  • Instead of almond pulp, you can use previously soaked almonds ground in a blender or almond flour.
  • You can replace the liquid almond flavor with almond sugar. If you are not a fan of the marzipan flavor, you can add vanilla sugar/extract or leave the cookies unflavored.
  • Instead of a pastry bag, you can use an ordinary plastic bag, put the dough in it and cut off one of the corners, this way you will prepare a DIY pastry bag, or you can put the dough on the baking tray with a spoon. Cookies don’t have to be perfect.

How to prepare almond cookies without a slow juicer?
If you want to prepare cookies without preparing almond milk, you can use both whole almonds and almond flour. Pour hot water over 1 cup of almonds and set aside to cool. Peel the cooled almonds. Soaked almonds are very easy to squeeze out of the skin. Place the soaked almonds in a blender and grind. Because the almonds have been soaked, they will be softer.
If you use ready-made almond flour, you can add 2-3 tablespoons of water to it to obtain a similar consistency. Almond flour is drier and finer than almond pulp, so cookies made with flour may turn out drier.

Can you make cookies from almonds with skin?
You can use both skinned and unskinned almonds, as long as you don’t mind the skin in the cookies. This will not negatively affect the taste of the cookies.

Almond Pulp Cookies Recipe

Ingredients
 
 

  • 130 g almond pulp (or ground almonds)
  • 70 g butter (soft)
  • 70 g powdered sugar
  • 100 g flour
  • 1 tsp baking powder
  • 1 egg
  • salt
  • almond flavoring (optional)

Instructions
 

  • Put all the ingredients into a bowl, you can add a few drops of almond aroma for a marzipan flavor. Mix everything with a mixer until a uniform mass is obtained.

  • Transfer the dough to a piping bag and press it out onto a baking tray lined with baking paper. You can also shape the cookies using a spoon instead of a bag. Place the cookies in the oven preheated to 180 °C (356 °F) and bake for approx. 15 minutes. Leave the baked cookies to cool before removing them from the baking tray. Enjoy your meal!
