Curd Cheese Mini Doughnuts

Delicious mini doughnuts that are really quick to prepare. They are made without yeast, only with baking powder. So you don’t have to wait for the dough to rise. This is an ideal option for Fat Thursday for busy people. You can choose your favorite toppings for them. They contain much more protein than regular doughnuts and are cheap! Recipe modifications:
- Cheese: I use full-fat cottage cheese for my doughnuts, but you can also use semi-fat or low-fat. It is important that it is well drained of water. I put the cottage cheese between several layers of paper towels and put it aside for a few minutes so that the paper absorbs excess water. Instead of cottage cheese, you can also use other cheese, such as mascarpone, ricotta, cream cheese or cheesecake cheese from a bucket.
- Additions: You can sprinkle the doughnuts with powdered sugar, cinnamon sugar or pour chocolate, Nutella, pistachio cream, icing or serve with jam. They also taste good dry.
How to fry doughnuts so that they do not burn and are not raw inside?
The frying time of doughnuts depends on many factors:
- dough temperature,
- oil temperature,
- burner power,
- number of doughnuts fried at once.
If you like to cook in the kitchen and often fry something, I really recommend buying a thermometer. A regular kitchen/laboratory thermometer up to 300°C will suffice. It is really irreplaceable to determine the right frying temperature.
Depending on the power of the cooker, you can fry at power 3 or 6 or a completely different one, there is no rule for this even if there are the same number of power levels, each hob heats differently. It is even more difficult to control the power of a gas burner. 1 l of fat heats up quite a long time, it takes a few minutes. Often it seems to us that the fat is hot enough, we throw in the doughnuts and they come out soaked in fat. If we don’t have a thermometer, we have to fry the doughnuts “by feel”.
When you think that the fat is hot enough, throw in one doughnut. Make sure it doesn’t stick to the bottom of the pot. The doughnut should float to the surface after about 3-5 seconds. Then the fat is well heated. If the doughnuts brown quickly, it means that the temperature is too high. The doughnuts should fry for about 5 minutes and be golden.
The proportions given below make about 35 small doughnuts.

Curd Cheese Doughnuts Recipe
Ingredients
- 250 g cottage cheese
- 250 g flour
- 12 g sugar with real vanilla
- 3 tbsp sugar
- 1 heaping teaspoon baking powder
- 2 eggs
- salt
Additionally
- 1 l oil (for frying)
- 1 tbsp powdered sugar (for sprinkling)
Instructions
- Take the cottage cheese and eggs out of the fridge in advance so that they reach room temperature. Dry the cottage cheese with a paper towel and place in a large bowl. Mash the cottage cheese with a fork, potato masher or with your hands. Sift the flour and baking powder into the cottage cheese. Add the sugar, vanilla sugar and salt. Mix with your hands. Finally, add the eggs and knead until you get a smooth dough.250 g cottage cheese, 250 g flour, 12 g sugar with real vanilla, 3 tbsp sugar, 1 heaping teaspoon baking powder, 2 eggs, salt
- Grease your hands with oil and form small walnut-sized balls of dough.
- Heat about 1 l of oil in a saucepan. Fry the doughnuts at about 160 °C (320 °F) for about 5 minutes until golden brown. Place the fried doughnuts on a paper towel to remove excess fat. Finally, sprinkle the doughnuts with powdered sugar. Enjoy!1 l oil, 1 tbsp powdered sugar
