Teriyaki Salmon Poke Bowl
Poke bowl is a simple dish that you can easily prepare at home. What’s more, you can create a completely different version every time by adding various vegetables, herbs, or toppings. All you need to do is cook some rice and add ingredients such as corn, carrots, or cucumber on top. Finish it off with a quick sauce, a source of protein, and your meal is ready!
Recipe modifications:
- Protein: Instead of salmon, you can use tofu, halloumi, tempeh, chickpeas, or chicken. You can also check out my recipe for a teriyaki chicken poke bowl.
- Vegetables: In this recipe, I suggest serving the salmon with sweet potato, avocado, cucumber, and edamame, but you can easily swap them for other vegetables, such as carrots, corn, broccoli, zucchini, radishes, asparagus, spinach, cherry tomatoes, bell peppers, pickled ginger, bottle gourd, or daikon.
- Rice: I recommend using sushi rice, which is fluffy and slightly sticky, but you can replace it with any type of rice you like (such as white, brown, or jasmine rice) or even grains (such as bulgur, pearl barley, or spelt).


How to cook perfect rice for a poke bowl?
Prepare the rice the same way you would prepare sushi rice (if you are using sushi rice). If you have a rice cooker, it is incredibly easy, but cooking it in a regular pot can sometimes be frustrating — especially when the rice at the bottom becomes overcooked while the rice on top is still undercooked.
First, rinse the rice 2–3 times until the water becomes mostly clear. Then add water in a 1:1 ratio. For example, use ½ cup of rice and ½ cup of water. Let the rice soak until the grains become opaque (about 30 minutes).
Bring the rice to a boil, then reduce the heat and cover the pot with a lid. Cook over low heat for about 5–10 minutes. The rice should not be uncovered, BUT I always check it after a few minutes to make sure it is not sticking to the bottom, and I give it a quick stir so it cooks evenly. The exact cooking time depends on your stove, pot, and the amount of rice you are making. This way, you can make sure the rice does not burn, overcook, or need to be removed from the heat earlier.
After about 10 minutes, turn off the heat and let the rice steam, covered, for a few more minutes. Finally, add a little rice vinegar, salt, and sugar to taste once the rice has cooled slightly.
Of course, you can also use regular white rice or any other type of grain prepared using your preferred method.

Are teriyaki sauce and soy sauce the same thing?
Of course not! Although teriyaki sauce is made using soy sauce as a base, they are completely different. It is similar to asking whether sugar and icing are the same thing.
Teriyaki sauce usually includes ingredients such as ginger, garlic, sometimes oyster sauce and/or fish sauce, as well as sugar. Starch is added to thicken it. Unlike soy sauce, which is thin and liquid, teriyaki sauce usually has a thicker, glaze-like consistency.
Teriyaki sauce is very easy to make at home. Simply combine all the ingredients, mix well, and bring everything to a boil.
What type of soy sauce should you use for teriyaki?
The type of soy sauce you choose depends on your personal preference. Light soy sauce has a milder flavor, while dark soy sauce gives the sauce a deeper color and more intense aroma. If you want to reduce the saltiness, you can use a reduced-sodium soy sauce.
Is poke bowl healthy?
Poke bowls usually contain plenty of vegetables, especially fresh ones, which makes them a great option for a healthy lunch or dinner. Lean meats, such as chicken, and fish are excellent sources of protein. If you want your meals to be filling but lower in calories, simply add more vegetables and protein while reducing the amount of rice and sauce.

Ingredients
- 200 g salmon
- 2 tbsp soy sauce
- 1 avocado
- 1 cucumber
- ¾ cup edamame
- 1 tbsp sugar
- 1 tbsp salt
Teriyaki sauce
- 2 tbsp soy sauce
- 2 cloves garlic
- 2 cm ginger
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp starch
- ½ cup water
Rice
- ½ cup sushi rice
- ½ cup water
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp salt
Fried Sweet Potatoes
- ¼ Sweet Potato
- 1 tsp brown sugar
- 1 tbsp oil
Additionally
- 1 bunch scallions (green onions)
- 1 bunch cilantro
- 1 tsp sesame seeds
- oil (for frying)
- water (for cooking edamame)
Instructions
- Prepare the rice as you would for sushi. Rinse it 2–3 times under cold water, then add water in a 1:1 ratio. Let the rice soak for about 30 minutes, until the grains turn opaque. Cook over low heat with the lid on. After 7–10 minutes, turn off the heat and let the rice steam, covered, for a few more minutes. Add salt, sugar and rice vinegar to the cooled rice and mix.½ cup sushi rice, 1 tbsp rice vinegar, 1 tsp sugar, 1 tsp salt, ½ cup water
- Rinse the salmon and pat it dry with paper towels. Drizzle with 1–2 tablespoons of soy sauce and let it marinate for a few minutes. Cut the salmon into bite-sized pieces, then cook them in a lightly oiled skillet over medium-high heat. Pour in the teriyaki sauce and continue cooking until it comes to a boil and thickens, coating the salmon evenly.200 g salmon, 2 tbsp soy sauce, oil
- Cook the edamame in lightly salted water with a pinch of sugar for 3–4 minutes, then drain well. Finely chop the scallions and cilantro, and slice your choice of vegetables, such as cucumber, avocado, and carrot.1 avocado, 1 cucumber, ¾ cup edamame, 1 tbsp sugar, 1 tbsp salt, 1 bunch scallions, water, 1 bunch cilantro

- Finely chop, grate, or press the garlic and ginger. Add all of the sauce ingredients to a small bowl or measuring cup and whisk until well combined.2 tbsp soy sauce, 2 cloves garlic, 2 cm ginger, 1 tbsp rice vinegar, 1 tbsp brown sugar, 1 tsp starch, ½ cup water
Fried Sweet Potatoes
- Peel the sweet potato and cut it into fries or thin slices. Toss with the sugar and oil, adding a pinch of salt if desired. Mix well until every piece is evenly coated. Heat a skillet over medium-high heat, then add the sweet potatoes in a single layer.
