Zucchini Stew
The season for zucchini will start soon, at my house at this time I always prepare lecho (zucchini stew), at least once a week because there is always plenty of it in the garden.
So I present to you a simple and easy recipe for a one-pot zucchini treat – a perfect cheap dinner for the whole family for 2 days. It is full of vegetables and colors and at the same time cheap. It takes little time to prepare it, just cut everything up, put it in a pot and cover it, and the dish will cook itself. You can eat them either with bread, potatoes or on its own.
In this recipe, I used tomatoes in three different forms, but if you don’t have fresh tomatoes or canned tomatoes or passata, you prefer a thicker consistency, less sour taste or you want to prepare less of it, you can easily omit any of them. Just add whatever tomatoes you have on hand 😉
You can also prepare a vegan version and do not add sausage. But for me, stew without sausage is not as good. Add the sausage you like best, e.g. polish sausage or chorizo. You can also add fried chicken breast or pieces of beef as to goulash. Zucchini stew
Zucchini Stew Recipe
Ingredients
- 1 zucchini
- 2 cloves garlic
- 150 g sausage
- 2 red pepper
- 3 tomatoes
- 400 g caned tomatoes
- 3 grains allspice
- 3 bay leaves
- 2 tsp parsley
- 1 tsp lovage
- pepper
- 1 tsp sweet paprika
- 2 tbsp oil
- 1 tsp oregano
- 1 tsp basil
- ½ tsp hot paprika
- salt
- 1 tsp granulated garlic
- 700 ml tomato passata
Instructions
- Cut all vegetables and sausage into cubes.
- In a pot, fry the sweet paprika with allspice and bay leaves. Add diced onion. Add salt. Add the sausage and garlic to the fried onion. Then add the peppers and zucchini. Then add fresh tomatoes and canned tomatoes. - Stir again, adding more salt, pepper or sugar if needed. You can cook the stew for a few more minutes. In the meantime toast some bread. The dish is ready when all the vegetables are tender. Enjoy your meal.
