Juicy Tenderloin in Mushroom Sauce Recipe



  • 3 cloves garlic
  • 250 ml dry red wine
  • 2 tbs mustard
  • 2 tbs honey
  • 5 tbs soy sauce
  • 2 tbsp marjoram
  • 1 tbsp chili powder
  • 2 tbsp paprika
  • 1 tbsp thyme
  • 1 tbsp tarragon
  • 1 tbsp nutmeg
  • 4 bay leaves
  • 9 grains allspice
  • 2 tbs olive oil
  • pepper


  • 600 g pork tenderloin
  • 500 ml cream 18%
  • parsley
  • 2 onions
  • 1 handfull dried mushrooms
  • 2 tbs oil
  • 250 g mushrooms
  • salt


  • Clean the tenderloin from membranes, tendons and fat. Make the marinade by mixing all the ingredients in a bowl and dip the meat in it. Cover and refrigerate for a few hours (preferably overnight).

  • Pour boiling water into dried mushrooms and drain after 15 minutes, then chop. Dice the onion. Peel the mushrooms and cut into slices. Chop the parsley.

  • 30 minutes before frying, remove the tenderloin from the refrigerator. Pour oil into the pan. Put the tenderloin on a hot pan and fry for about 1 minute on each side over high heat so that the meat is juicy inside. When the tenderloin is fried, you can pour it with a bit of marinade, reduce the heat and cover for a few minutes. Then put the tenderloin on the board to rest. Don't cut it yet! Otherwise all the juices will run out and the tenderloin will become dry.

  • In the same pan where you fried the tenderloin, fry the onions, then pour the entire marinade, add the mushrooms and salt. Fry all the ingredients.
    When the onion is soft, add the cream. Boil the sauce, add parsley and sliced tenderloin and that's it. Tenderloin in mushroom sauce is ready.
