Strawberry and Pistachio Salad

Delicious salad with strawberries, that’s perfect for summer. Sweet strawberries and crunchy pistachios are great combination. The best thing about this salad is the balsamic vinegar vinaigrette, which I can eat with any salad.
Strawberry salad doesn’t have to be a fruit salad. The combination of strawberries and vegetables, cheese and even meat is delicious. A savory salad with strawberries is a fantastic lunch or dinner, it tastes springy/summery and somehow luxurious.

You spontaneously bought a kilo of strawberries and you don’t know what to do with it? Are you wondering what vegetables and cheese go well with strawberries? This salad is the answer to all your questions! You can make it quickly and even though there are four servings, you can eat it yourself 🙈.

Recipe modifications:

  • You can replace the pistachios with almond flakes, walnuts or pecans.
  • You can replace mozzarella with feta cheese.
  • Instead of a mix of baby leaves or spinach, you can use lamb’s lettuce, arugula or another salad mix.
  • You can replace the chicken with turkey, prosciutto or omit the addition of meat.
  • You can replace honey with sweet syrup, e.g. maple or agave..
  • You can add e.g. fried green asparagus, olives, radishes, carrots or grated Parmesan cheese to the salad.

Recipe tips:

  • I only season the chicken with salt, fried until golden brown, it is delicious and does not need any additional spices that would overwhelm the other flavors in the salad.
  • I add a lot of freshly ground pepper to the vinaigrette and finally sprinkle the finished salad with pepper. Pepper goes very well with strawberries.
  • The salad goes well with crispy croutons, which you can fry in the pan in which the chicken was fried. A moment in a very hot pan is enough to obtain perfectly crispy bread.

Strawberry salad does not contain gluten (unless you serve it with croutons 😉). The proportions given below will make approximately 4 large portions of chicken salad (approx. 250 g).

Strawberry and Pistachio Salad Recipe

Ingredients
  

  • 1 chicken breast (big)
  • 125 g mozzarella (whole or little balls)
  • 250 g strawberries
  • 125 g baby leaves mix or spinach
  • ½ red onion
  • 100 g salted pistachios (approx. 50 g without shells)
  • salt
  • olive oil

Sos

  • 8 tbsp olive oil
  • 1 tbsp balsamic glaze/vinegar
  • 1 tbsp honey (runny)
  • 1 tsp whole grain mustard
  • salt
  • pepper

Instructions
 

  • Clean the chicken breast from membranes and tendons. You can cut the breast lengthwise to make it thinner and fry faster. Season the chicken with salt and fry it in a pan with a little bit of olive oil. Place the chicken in the pan and do not move it so that it does not release any juice. When it turns golden, turn it to the other side and fry again until golden brown. Remove the fried chicken from the heat and set aside to cool.
    1 chicken breast, salt, olive oil
  • If you are using whole mozzarella, cut it into cubes. If you use mozzarella in small balls, you do not need to cut them. Dry the mozzarella thoroughly with a towel so that it does not get wet and does not release whey into the salad.
    Cut the strawberries into quarters. Cut the onion into slices. Wash and dry the mix of baby leaves/spinach. Chop the pistachios.
    125 g mozzarella, 250 g strawberries, 125 g baby leaves mix or spinach, ½ red onion, 100 g salted pistachios
  • Prepare the dressing. Mix all ingredients in a bowl. Taste the sauce, you can change the proportions of ingredients to suit your preferences.
    8 tbsp olive oil, 1 tbsp balsamic glaze/vinegar, 1 tbsp honey, 1 tsp whole grain mustard, salt, pepper
  • On a large platter or bowl, first arrange the lettuce/spinach, then the chicken, onion, mozzarella and strawberries. Pour the dressing over the salad and sprinkle with chopped pistachios. Enjoy!
