Spaghetti alla Puttanesca

Puttanesca pasta is a recipe for a very quick and very easy dinner. Perfect for a quick lunch, a romantic dinner or for a visit from unexpected guests. A salty, intense and aromatic meatless sauce rich in umami flavor thanks to anchovies. Perfect dinner in 15 minutes!

A few tips:

  • You can replace canned tomatoes with passata or puree.
  • Use the olives you like best, black or green, it doesn’t matter. You can also use several types and varieties of olives.
  • Anchovies  are sold in the form of small fillets covered with oil. Usually in a jar or can. 
  • Be careful with salt! Olives, capers and anchovies are quite salty, so try the made sauce first before adding salt to it.
  • Cook the pasta until almost al dente. Add the hot pasta to the sauce and fry for approx. 0,5-1 minute. It is better to cook the pasta too briefly so that it can cook while frying with the sauce than to serve overcooked pasta.

Spaghetti alla Puttanesca Recipe

Ingredients
 
 

  • 400 g canned tomatoes (cut)
  • 1 onion
  • 3 cloves garlic
  • ½ tsp chilli flakes
  • 1 handful olives
  • 3 tsp capers
  • 5 fillets anchovies
  • 1 bunch parsley
  • olive oil (for frying)
  • salt
  • pepper
  • 300 g pasta (e.g. spaghetti, linguine)

Instructions
 

  • Chop the onion and parsley. Cut the capers, olives and anchovies into smaller pieces.

  • Put the pasta into salted boiling water and cook until it is almost al dente.
    300 g pasta, salt
  • While the pasta is cooking, prepare the sauce. Fry the onion in a pan. When the onion is translucent, add chopped or pressed garlic. Add olives, capers, anchovies and chilli. Fry for about 30 seconds. Add canned tomatoes. Fry for a few minutes until the pasta is cooked.
    Finally, add chopped parsley and season with salt and pepper. Add cooked pasta straight from the pot to the pan. Mix the sauce with the pasta in the pan. Enjoy your meal!
