Oven-Baked Wild Salmon is an easy and quick no-fuss dinner recipe. All you need to do is season the fish, chop the vegetables, put everything in the oven, and the salmon will bake itself. This recipe has a lightly sweet–spicy–sour flavor.

A whole baked salmon is also a perfect idea for a Christmas Eve dish. If you’re tired of traditional holiday meals and looking for a modern take on a Christmas Eve fish dish, it’s worth baking a whole wild salmon with chili and honey, served with crispy vegetables.

Recipe modifications:

  • Fish: For this recipe, you can use salmon in any form (fillet, whole fish, steak) as well as other types of fish (e.g. pollock, sea bream, trout, cod, halibut).
  • Vegetables: In addition to sweet potatoes and regular potatoes, you can also use carrots, parsley root, celery, zucchini etc.

What’s the difference between wild salmon and regular salmon?
Wild salmon contains less fat and fewer contaminants than farmed salmon. It also has more vitamin D and omega-3 fatty acids. Its flesh is firmer and the flavor more intense. Because of this, it may seem “drier” than farmed salmon, which taste we are more accustomed to.

How to bake salmon so it stays juicy?
Bake the salmon with vegetables uncovered. Put it into a preheated oven without convection (fan off), using top and bottom heat. This way, the salmon won’t dry out and will brown nicely.

What is a quick marinade for salmon?
Salmon with honey and chili doesn’t need a long marinating time. Before baking, simply wash and pat the fish dry, then salt it and add all the spices. The quickest marinade is just salt and lemon juice. You can also add a bit of fat, such as butter, and honey if you like sweet salmon, or chili if you prefer it spicy.

Do you need to defrost salmon before baking?
It’s best to thaw salmon before baking, especially if it’s frozen in one large piece. This ensures the fish will be cooked through by the time the vegetables are ready. It also shortens the baking time, saving electricity. Ideally, take the salmon out of the freezer a day earlier and let it thaw slowly in the refrigerator.
The situation is different when using frozen breaded fish, such as frozen salmon steaks. These should not be defrosted, as the breading would become soggy and fall off. The steaks are small and thin enough to bake through without thawing.

Wild Salmon Baked in the Oven Recipe

Ingredients
 
 

  • 700 g salmon (filet, whole or steak)
  • 3 medium potatoes
  • 1 medium sweet potato
  • 1 medium red onion
  • 125 g cherry tomatoes
  • 2-3 slices lemon
  • 1 tsp chili flakes
  • 1 tsp honey
  • 4 tbsp olive oil
  • 30 g butter
  • 2 cloves garlic
  • salt

Instructions
 

  • Cut the potatoes and sweet potatoes into strips (for French fries). Slice the onion. Place the chopped vegetables in a bowl and drizzle with olive oil. Add ½ teaspoon chili powder, 1 crushed garlic clove, salt, and mix.

  • Wash and dry the fish thoroughly. Place the fish on a baking sheet lined with baking paper and sprinkle salt on the skin and meat. Add ½ teaspoon chili powder to the inside of the fish (or on top for fillets and steaks), and 1 clove of pressed garlic and rub them into the flesh. Finally, add the honey, butter, and lemon slices.

  • Arrange the chopped vegetables and tomatoes around the fish. You can also drizzle with a little honey. Place in an oven preheated to 200°C (conventional heating392 °F) and bake for about 35 minutes, until the potatoes are tender. Enjoy!
