Red Curry Cod
Red curry is a popular dish in Thai cuisine, based on coconut milk and red curry paste.
An aromatic, delicious and quick dinner full of vegetables, colors and flavors. Curry goes great with rice or pasta, but I prefer the solo option. I used cod for this recipe, but you can substitute it with any other fish, chicken or tofu.
Red curry paste or spice is available in most stores. Try to choose one that has kaffir lime and lemongrass in it, thanks to them you will get an interesting citrus flavor, you can also add them separately like I did.
It will take you less than 30 minutes to prepare this delicious dish! It’s a great way to prepare cod or tilapia in a different way.

Thai Red Fish Curry Recipe
Ingredients
- 500 g cod fillet (can be substituted with any fish, tofu or chicken)
- 1 cup peas
- 2 tbsp red curry paste or spice
- 1 bunch spring onions
- 1 bunch parsley or cilantro
- 1 lime
- 20 g fresh ginger
- 4 cloves garlic
- 1 carrot
- 1 bell pepper
- 400 ml coconut milk
- 2 tbsp oil (for frying)
- 5 leaves Kaffir lime (optional)
- ½ tsp dried lemongrass (optional)
- 2 tbsp fish sauce
- salt
- pepper
Instructions
- Divide the washed and dried fish into 4 portions, salt and fry in a pan with a drop of oil. Put the fried fish on paper sheet to get rid of excess fat.500 g cod fillet, 2 tbsp oil, salt
- Wash peppers and carrots and cut into strips.Chop spring onions and parsley.Peel ginger and garlic and chop finely.1 bunch spring onions, 4 cloves garlic, 1 carrot, 1 bell pepper, 20 g fresh ginger
- In a dry frying pan, heat the spices (curry, kaffir, ginger and lemongrass; if your curry paste/spice already contains lemongrass and kaffir lime leaves, you don't need to add them separately). When the spices release their aroma, add 2 tablespoons of oil and chopped onion. Add garlic, then carrots, peppers and peas to the fried spring onions with spices. Fry all vegetables, then add parsley, lime juice, coconut milk, fish sauce, salt, pepper. Stir and boil. Pour the finished curry in a bowl. Sprinkle with spring onions and parsley. Put a portion of fried fish on top.
