Pork Skewers

Pork skewers

These pork skewers are a definite HIT for a Saturday barbecue. Juicy tenderloin with a slightly wine aroma with an Asian twist, roasted onion and sweet prunes wrapped in salty bacon. I advise you to prepare a triple portion right away 😉

You can prepare them on the grill, pan or in the oven.
With the given proportions, you will make approx. 7 skewers 25 cm long.
What to replace or what other vegetables can you grill? You can easily stuff zucchini, eggplant, carrots, peppers, pineapple, asparagus, cherry tomatoes or corn on skewers.
You can use chicken, turkey, beef or tofu. It is best to marinate the meat overnight, but if you do not have time, marinate it for at least 2 hours.
Onion slices should be about 1 cm thick. Cut the meat into 2x2x2 cm cubes. It is worth making sure that the pieces of meat on the skewers are of similar size, thanks to which they will cook evenly. And no one will come across a raw or dry bite.
If you’re using wooden skewers, it’s a good idea to soak them in water for a few minutes before using them. Thanks to this, you will avoid burning the sticks during grilling.

For skewers

  • 500 g pork loin (1 piece)
  • 165 g prunes (21 pieces)
  • 100 g bacon (7 slices)
  • 3 onions

  • ½ cup soy sauce
  • 3 cm ginger
  • 6 cloves garlic
  • cup balsamic vinegar
  • ½ cup honey
  • 1 tbsp sesame oil
  • cup oil
  • 1 tsp Asian spice mix (Chinese or Thai)

  • Clean the tenderloin from and remove the silver skin. Then cut it into thick cubes.
    500 g pork loin
  • Prepare the marinade. In a bowl, mix all the marinade ingredients. Put the sliced tenderloin into the marinade. Rub the meat with the marinade. Cover and put it in the refrigerator overnight.
½ cup soy sauce, 3 cm ginger, 6 cloves garlic, ⅓ cup balsamic vinegar, ½ cup honey, 1 tbsp sesame oil, ⅓ cup oil, 1 tsp Asian spice mix
  • Cut slices of bacon into 3 smaller slices. Wrap each prune in bacon.
    165 g prunes, 100 g bacon
  • Cut the onions into thick slices.
    3 onions
  • Prepare skewers. First, stick a piece of porkloin on a stick, then a prune wrapped in bacon and a slice of onion. Finish the skewer with a piece of tenderloin so that nothing falls off the skewer.
  • Ready skewers can be grilled, fried in a pan (regular/grill) or prepared in the oven.
    1. Grilling: Grill the skewers on all sides for about 10-15 minutes. So that the onion softens and the meat is firm to the touch – baked.
    2. Frying: Pour a little oil into the pan. Fry the skewers in a hot pan for about 5-10 minutes. Be sure to sear the skewers on all sides.
    3. Baking: Bake the skewers on a baking tray lined with baking paper. Preheat the oven to 200 ° C (392 °F), insert the baking tray with skewers and bake for 30-35 minutes.
