Spaghetti with Pistachio Pesto and Burrata
Pasta with herbal sauce without cooking, frying, chopping. Just grind or blend everything. This is a recipe for a very quick dinner. If you are a fan of pesto, you have to try this variation! This is the perfect recipe for a date or if you want to impress someone with an exquisite dinner. Burrata and pistachios make the dish seem very luxurious (in fact, pesto with pistachios is cheaper than the original one with pine nuts 😉).
Although I wrote spaghetti in the title, to prepare this recipe I used linguine pasta, which is a bit wider – flattened spaghetti, but of course you can use any pasta you like.
What is burrata? What milk is burrata made from?
Burrata is a cow’s milk cheese that looks like mozzarella, but has a creamy interior. It is actually mozzarella filled with cream and mozzarella pieces, which we call burrata stracciatella. After cutting the burrata, a creamy-cheese center flows out of it, which is why the burrata is placed whole on a pizza or a portion of pasta so as not to spoil the WOW effect.
Modifications:
- If you want the pistachio flavor to be very noticeable, add more, e.g. 200 g. Similarly, you will have to add more olive oil so that the pesto is not too thick. You can use salted or unsalted pistachios. Of course, you can replace the pistachios with any nuts.
- You can replace the parmesan with grana padano cheese.
- In addition to basil, you can use arugula, cilantro or parsley for the pesto.
Important:
Remove the burrata from the fridge in advance so that it has a liquid center and so that the pasta does not get cold after mixing.
Be gentle with burrata as it can easily tear or puncture!

Pistachio Pesto Pasta with Burrata Cheese Recipe
Ingredients
- 100 g pistachios (weighed in shells)
- 25 g basil (1 pot)
- 1-2 clove garlic
- 5-8 tbsp olive oil
- 30 g parmesan cheese
- pepper
- salt
- 2 balls burrata
- 150 g pasta (dry)
Instructions
- Prepare the pesto. Put the peeled garlic, peeled pistachios, basil leaves and grated parmesan in a food processor. Add salt and pepper. Pulse. Add olive oil. Pulse. Add more olive oil if necessary to achieve the desired consistency.100 g pistachios, 25 g basil, 1-2 clove garlic, 5-8 tbsp olive oil, 30 g parmesan cheese, pepper, salt
- Cook the pasta al dente. Mix the hot pasta with the pesto. Transfer the pasta to a plate. Arrange the burrata on top of the pasta. Sprinkle with pepper and chopped pistachios. Enjoy!2 balls burrata, 150 g pasta
