Parmesan Panko Crusted Asparagus

Baked asparagus in panko with parmesan

Asparagus in panko, or maybe asparagus fries in crispy breadcrumbs? Either way, for this recipe you’ll need asparagus, panko (or breadcrumbs), and Parmesan cheese. Soft on the inside and crispy on the outside. An easy recipe for delicious baked asparagus, perfect as a snack or addition to dinner.

Do you like the recipe but are missing something? Here are my suggestions on how you can diversify this dish.
Recipe modifications:

  • To enhance the flavor, you can add garlic and/or chili flakes to panko.
  • You can replace panko with breadcrumbs.
  • Instead of baking, you can fry the breaded asparagus in a pan.
  • If you don’t want to get yourself messy with breading the asparagus, you can prepare a quick version. Mix melted butter or olive oil with panko and Parmesan cheese, salt and pepper and sprinkle the mixture over the asparagus arranged on a baking tray. The asparagus will not be evenly covered with breading, but it will still be delicious. You won’t need any flour or eggs for this version.
  • Instead of asparagus in panko, you can coat e.g. blanched (i.e. briefly cooked and cooled in cold water) green beans, cauliflower, broccoli, zucchini, eggplant or even potatoes!

Can asparagus be peeled?
White asparagus should be peeled because it is more stringy, while green asparagus, if it is fresh and young, does not need to be peeled. If you don’t peel the asparagus and they are a bit stringy that’ okay, but the fibrous skin is difficult to eat. If you want to peel asparagus, it is best to do it using a peeler.

Can you eat asparagus end?
The woody ends of asparagus are hard, so to get rid of them, bend the asparagus and it will break in the right place. This will get rid of all the hard tip. However, the tips are edible! You can prepare soup or sauce from them and blend it.

How long should you bake asparagus in the oven?
Bake asparagus in panko for about 35 minutes at 200°C (392°F) so that the parmesan and panko brown. However, if you do not bread the asparagus but bake it, e.g. with a butterry-panko crumble, about 15 minutes is enough.

What to bake asparagus with?
In addition to panko and parmesan, you can bake asparagus, e.g. with Parma ham, bacon, ground nuts etc.

Do you need to cook asparagus before baking?
Do not cook asparagus before baking, just wash them. Asparagus cook very quickly, so you can put raw asparagus in the oven or in a pan.

What to serve baked asparagus with?
Asparagus in panko tastes great with sauce, e.g. Hollandaise or mustard-lemon. Just mix mustard, mayonnaise, lemon juice, pepper and salt and that’s it!

Asparagus in panko contains gluten. The proportions given below will give you 2 large portions of breaded asparagus (approx. 300 g). However, if you want to serve asparagus as an addition to another dish, it will easily be enough for 4 people.

Crispy Roasted Asparagus in Panko Recipe

Ingredients
 
 

  • 500 g asparagus
  • 3 eggs
  • 4 tbsp flour
  • 7 tbsp panko
  • 50 g parmesan cheese
  • salt
  • pepper

Instructions
 

  • Wash the asparagus. Get rid of the woody ends.
    Grate the Parmesan on a fine grater and mix with panko, pepper and salt. Transfer to a plate (1).
    Beat the eggs in a deep plate with a fork (2).
    Pour the flour onto a flat plate (3).
    500 g asparagus, 3 eggs, 4 tbsp flour, 7 tbsp panko, 50 g parmesan cheese, salt, pepper

  • Bread the asparagus as you would bread the pork chops. First, dip the asparagus in beaten egg (2), then coat in flour (1), dip in egg again (2) and coat in the panko and Parmesan mixture (3).

  • Place the coated asparagus on a baking tray lined with baking paper. Place in the preheated oven and bake for 35 minutes at 200 °C (392°F). Serve hot.
