Pizza bites are perfect for all these occasions! These mini pizzas are a HIT at every children’s party and also at adult parties. Small pizzas perfect for your hand, which you can eat standing up without a plate, are perfect for both large and small parties. They are also great as a second breakfast for school or lunch for work. You can prepare them in many versions. Everyone will find something for themselves. Your guests can compose their own mini pizza with ingredients prepared by you. Or maybe your children like playing in the kitchen? Make these little pizzas with them!

Below you will find a step-by-step recipe on how to prepare pizzas in two versions: vegetarian and meat.

How to bake pizza bites?
It is best to bake mini pizzas and regular pizzas on a preheated pizza stone and in an oven preheated to the maximum possible temperature. The stone absorbs moisture from the dough and the bottom is not rubbery or hard, but soft and crunchy, and the pizza bakes much faster. But if we don’t have a pizza stone, we can bake the pizzas on a perforated (with holes) pizza baking tray or a regular baking tray. To make the dough golden and fried on the bottom like a pizza pan, it is worth greasing the baking tray. Instead of fat, we can also sprinkle the baking tray with semolina, which will prevent the pizza from sticking to the tray, and the semolina stucked to the dough will be a crunchy, tasty addition. You can replace it with rice flour, but it is less available and more expensive, so I use semolina.

You can also traditionally line the baking tray with baking paper to prevent the dough from sticking to the tray. Remember that pizza baked on a baking tray takes longer to bake than on a stone.

How to replace tomato sauce on pizza?
Instead of tomato sauce, you can use: ketchup, pesto, BBQ sauce, garlic sauce or white sauce (natural yogurt and cream 36% fat).

What cheese for pizza?
Traditionally, mozzarella is added to pizza, but for homemade mini pizzas you can use any cheese that melts, e.g. Edam, Gouda or cheddar.

What can you prepare mini pizzas with?
Here are some suggestions for meat and vegetarian pizzas:

  • sauce, cheese, gyros chicken, red onion
  • pesto, cheese, mortadella/ham
  • sauce, cheese, tomatoes, ham
  • sauce, cheese, mushrooms, ham
  • sauce, cheese, bacon
  • sauce, cheese, jalapeno, pepperoni
  • sauce, mozzarella, parmesan, yellow cheese e.g. Edam or Gouda
  • sauce, cheese, tomatoes, olives
  • sauce, cheese, ham, corn
  • sauce, cheese, bell pepper, onion

How to make express pizzas?

Do you want a quick snack and the fridge is empty? You don’t have much time and your friends are about to drop by? Or maybe you just want a quick pizza without too much work? Here are ideas on how to prepare instant pizzas in 10 minutes:

  • Puff pastry mini pizzas – unroll the puff pastry roll on a baking tray. cut into small squares. Spread the center of each square with ketchup, sprinkle with cheese and add your favorite ingredients, e.g. ham or tomatoes. Finally sprinkle with oregano. Place the tray with the mini pizzas in the oven preheated to 200 °C and bake for 15-20 minutes.
  • Pizzas made of ready-made pizza dough – proceed in the same way as in the case of pizzas made of puff pastry.
  • Pizzas on bread or rolls, i.e. “zapiekanki”- Spread slices of bread or a roll cut in half with butter, ketchup, sprinkle with cheese and other toppings and oregano. Bake for about 10 minutes in an oven preheated to 200-220°C.
  • Pizza from the pan – you can use tortilla or piada, pinsa or lavash as the base. Place the pancake on the pan, spread with ketchup, add the toppings, cover and heat over low heat until the cheese melts. You can also prepare it in the oven. Bake for approx. 5-10 minutes at 180°C.
  • You can replace the tomato sauce with ready-made tomato sauce or ketchup or other sauce mentioned above ⬆⬆⬆.

How to reheat mini pizzas?

You can reheat the pizzas in the oven (180-200°C), in the microwave or in a frying pan (add a little oil and cover with a lid).
Mini pizzas are perfect for people on a vegetarian, flexitarian and pescatarian diet. They contain gluten.
The proportions given below will make approximately 30 tiny pizzas or approximately 10 mini pizzas (like from a bakery).

Recipe for Mini Pizzas

Ingredients
 
 

Dough starter

  • 300 ml warm milk
  • 2 tbsp wheat flour the best will be "00" type
  • 8 g dry yeast

Dough

  • 500 g wheat flour the best will be "00" type
  • 1 tsp salt
  • 3 tbsp olive oil

Seasoning

  • 1 tsp oregano
  • 1 tsp basil
  • ½ tsp savory
  • ½ tsp garlic powder
  • ½ tsp sugar
  • salt
  • pepper

Tomatoe sauce

  • 400 g canned tomatoes (chopped)
  • 1 onion
  • 2 cloves garlic

Toppings

  • 200 g cheese
  • 100 g cherry tomatoes
  • 1 handful black olives
  • 100 g ham
  • 1 green bell pepper
  • 85 g sweetcorn

Instructions
 

Dough starter

  • Prepare the dough starter by adding dried yeast and 2 tbsp of flour to warm milk. Mix and set aside for 15 minutes (until the dough starter has doubled its volume).
    300 ml warm milk, 8 g dry yeast, 2 tbsp wheat flour

Dough

  • Sift flour into a bowl, add salt, mix. Add the dough starter, oil and then knead the dough for 20 minutes. Cover and let it rise (for about 30 minutes).
    500 g wheat flour, 1 tsp salt, 3 tbsp olive oil
  • Knead the dough again and form into balls (about the size of small plums). Cover and let rise again (for about 15 minutes).
  • Form small pizzas from the balls, add sauce and toppings.
  • Put in a preheated oven to maximum temperature (in my case fan assisted heating or "pizza" mode482 °F in my case). If you bake on a pizza stone like me, 5 – 7 minutes of baking is enough.

Tomato sauce

  • Chop the onion, fry on the pan, add salt, garlic and canned tomatoes. Add the rest of the spices, fry for 10 minutes and let it cool down.
    1 tsp oregano, 1 tsp basil, ½ tsp savory, ½ tsp garlic powder, ½ tsp sugar, salt, 400 g canned tomatoes, 1 onion, 2 cloves garlic, pepper

Toppings

  • Grate the cheese
    200 g cheese
  • I version (mini pizzas with tomato sauce). Use tomato sauce, decorate with sliced cherry tomatoes and olives.
    100 g cherry tomatoes, 1 handful black olives
  • II version (mini pizzas with BBQ sauce). Use BBQ sauce, garnish with diced ham, bell peppers and canned corn.
    100 g ham, 1 green bell pepper, 85 g sweetcorn
