Marzipan
A malleable sweet almond mass, perfect for layering cakes or preparing marzipan potatoes or other desserts.
Traditional marzipan is made from almonds, but you can make marzipan from other nuts, such as pistachio marzipan or hazelnut marzipan. Just swap the almonds for other nuts.
I used almond flour (i.e. ground almonds) to make the marzipan, which speeds up and makes the work much easier. You can also use whole almonds, of course. Just peel them and grind them in a food processor.
Modifications:
- Almonds – you can use them in any form. Whole unpeeled almonds need to be soaked and peeled. Whole or flaked almonds should be ground. The easiest way is to use ground almonds without the skin or almond flour.
- Icing sugar – if you don’t have icing sugar, you can grind regular sugar in a coffee grinder or a food processor.
- You can skip the addition of rose water, just use more rum.
- You can also add Amaretto aroma instead of almond aroma, preferably natural. You can replace rum and aroma with Amaretto liqueur. Amaretto itself contains the taste and aroma of almonds, so if you use it, you do not need any other alcohols or aromas.
Why does the marzipan mass crack?
If the mass does not want to combine or cracks, it means that you need to add more liquid. If you want the mass to be softer, add more liquid. If your mass has been lying uncovered for a longer time, it may have dried out. If you want to reshape it, just add a little rum/Amaretto to it and it will become smooth and plastic again.
Does marzipan contain alcohol?
Yes, marzipan contains alcohol. You will need rum or Amaretto to prepare it. If you want to prepare marzipan without alcohol, replace it with water and use natural Amaretto/almond aroma.
What does marzipan taste like?
Marzipan has an intense almond taste. You can also find this sweet aroma in natural plum or apricot seed oils. That is why these seeds are used in the production of Amaretto.
Who can’t eat marzipan?
Marzipan cannot be eaten by people allergic to almonds.
Can marzipan be eaten raw?
Marzipan is a mixture of almonds and sugar. It does not need to be heat treated. After mixing, it is ready to be eaten.
How to store marzipan?
You can store marzipan in a tightly closed container or foil-wrapped in the fridge for several weeks. It contains a lot of sugar and very little water, so it won’t go moldy quickly.
Marzipan is vegan and gluten-free.

Ingredients
- 250 g almonds (whole or ground)
- 250 g powdered sugar
- 40 g rum
- 15 g rose water (optional)
- 1 tsp almond flavoring (or Amaretto flavoring)
Instructions
- If you use whole almonds, you must first pour hot water over them and leave for a few hours. Soaked almonds are easy to peel and the nut itself becomes soft and easier to grind. You must grind peeled almonds into powder to obtain a smooth marzipan mass.250 g almonds
- Sift ground almonds and powdered sugar into a bowl. Add the rest of the ingredients and mix. Finally, knead with your hand like a dough to obtain a uniform mass. If the mass is too dry and does not want to combine, you can add more rum.250 g powdered sugar, 40 g rum, 15 g rose water, 1 tsp almond flavoring
