What shrimp should I use?
You can use frozen raw or blanched shrimps available in any supermarket, e.g. white Vannamei shrimps. You can also use whole shrimp if you know how to peel and clean them. Remember that shrimps that say “cleaned” on the packaging often contain black intestine, which must be removed because it contains waste products of the shrimp and may spoil their taste. Raw shrimp often have a transparent shell – a “skin” that also needs to be removed.

How to defrost shrimp quickly?
Put the frozen shrimps in a bowl and pour cool, but not icy, water over them. The shrimp are small so they will thaw quickly. Do not pour hot water over the shrimp because rapid defrosting at high temperatures favors the growth of bacteria.
Dry and clean the thawed shrimp.

How to clean shrimp?

Cut the shrimp along its belly or back from the head to the tail and cut off the tail (if you want to serve fried shrimps that you will eat with your hands, you can leave the tail to make it easier to grip the shrimp. However, when serving shrimps with pasta, it is worth cutting off the tail because it is inedible). Pull out the black “worm” – the intestine – with your fingers. Rinse thoroughly cleaned shrimps under cold running water (thoroughly wash your hands, the surface and the knife that touched the shrimp and their intestines). Dry the prepared shrimp with a paper towel and throw them into the pan.

What to eat shrimp with?
Shrimps in white wine taste best with spaghetti pasta (e.g. nero di seppia) or tagliatelle or with bread, e.g. ciabatta, baguette, focaccia.
