Garlic Knots Recipe

Ingredients
 
 

Leaven

  • 250 ml warm water
  • 7 g dry yeast (or 15 g fresh)
  • 1 tsp sugar
  • 3 tbsp flour

Dough

  • 5 tbsp olive oil
  • 1 tsp salt
  • 450 g wheat flour type "00" (pizza dough flour)

Toppings

  • 7 cloves garlic
  • 150 ml olive oil
  • 1 tsp italian seasoning
  • 1 bunch parsley
  • 25 g parmesan
  • pepper

Instructions
 

  • Prepare the leaven by mixing warm water (30-40 °C), yeast, sugar and flour. Cover with a cloth and set aside for 15 minutes.
    250 ml warm water, 7 g dry yeast, 1 tsp sugar, 3 tbsp flour
  • Sift the rest of the flour into a bowl, add the risen leaven and salt. Knead the dough for about 10 minutes. Add olive oil at the end of kneading. When the dough is ready, brush it with olive oil so it doesn't stick to the bowl. Cover and leave for 1-2 hours to rise.

  • When the dough has risen, divide it into equal parts (about 22). Form them into rolls about 15-20 cm long and 1-2 cm in diameter. Then tie knots (check how to do it in the video below). Cover the finished buns and let them rise for 30 minutes.
  • In the meantime, you can prepare the toppings. Peel the garlic and chop it. Then put it in a saucepan, add herbs and olive oil. Cook for 1-2 minutes so that the garlic doesn't burn. Grate the Parmesan on the small holes of a grater and finely chop the parsley.

  • Put the knots in a preheated oven at Conventional Heating250 °C and bake for 15-20 minutes until they are golden brown.
    Pour the hot knots with olive oil and garlic, sprinkle with cheese and parsley. Season with pepper. Mix thoroughly so that all the knots are covered with Parmesan cheese and garlic oil and done. You can add more oil if you think it's not enough. Enjoy your meal!
