Creamy leek soup

Wondering what to do with for dinner? How about a very easy, quick and cheap soup that is filling and delicious? Perfect comfort food. You can prepare everything in one pot. Leek and potato soup is a quick and cheap recipe and you can buy the ingredients at any supermarket or grocery store.

Example modifications to the recipe:

  • Instead of wine, you can acidify the soup with lemon juice, sour cream or natural yogurt.
  • You can use any vegetable, chicken or beef broth or cook your own broth from vegetables and a piece of meat.

What is potato and leek soup made of?
To prepare the leek and potato cream, you also need onion, garlic, broth, spices and, optionally, a little white wine.

How to thicken leek soup?
Thanks to the potatoes, the soup will be thick, so you don’t need to thicken it additionally. Potatoes contain a lot of starch, which is a great thickener. However, if your soup turns out to be too thick, just add more broth.

What herbs to use for leek soup?
Season the leek soup with nutmeg and thyme. Typically, add salt, pepper, bay leaves and allspice to the soup.

What to serve cream of leek soup with?
You can serve the leek and potato cream with puff peas, croutons, bacon cracklings, roasted sunflower or pumpkin seeds, and a spoonful of sour cream or yogurt.

You can prepare the soup in a vegan version using vegetable broth and not adding butter. Leek and potato soup does not contain gluten.

Creamy Leek Soup Recipe

Ingredients
 
 

  • 2 leeks
  • 3 – 4 potatoes (medium)
  • 2 onions
  • 2 cloves garlic
  • 1 l broth
  • 100 ml white wine (optional)
  • 4 bay leaves
  • 1 tsp thyme
  • â…“ tsp nutmeg
  • ½ tsp ground allspice (or a few grains)
  • salt
  • pepper
  • olive oil (for frying)
  • 1 tbsp butter

Instructions
 

  • Cut the onion and leek into thin slices. Peel the potatoes and cut into cubes.
    2 leeks, 3 – 4 potatoes, 2 onions
  • Pour a few tablespoons of olive oil and butter into the bottom of the pot and fry the onion with a pinch of salt. When the onion becomes soft and translucent, add the leek. Add spices and pressed or chopped garlic. Fry until the leek softens. Add wine and fry until the alcohol evaporates. Finally, add the potatoes and pour the broth over it. Cover and cook for approx. 20 minutes until the potatoes are soft.
    2 cloves garlic, 1 l broth, 100 ml white wine, 4 bay leaves, 1 tsp thyme, ⅓ tsp nutmeg, ½ tsp ground allspice, salt, pepper, olive oil, 1 tbsp butter
  • When the potatoes are cooked, remove the bay leaves and allspice from the soup if you added whole grains. Blend the soup. If the soup is too thick, add more broth, blending constantly to mix the soup well. Enjoy your meal!
    You can add salt and/or pepper to taste to the blended soup. You can serve the soup, for example, with puff peas, croutons, roasted sunflower seeds, bacon chips or a dollop of sour cream.
