Chicken Skewers
These chicken skewers are an absolute must-have at any summer barbecue. Juicy, well-seasoned chicken meat and roasted vegetables create a complete dish on a stick. You can prepare them on the grill, pan or in the oven. You can also prepare skewers without sticks.
With the given proportions, you will make about 12 skewers 40 cm long.
What to replace or what other vegetables can you grill? You can easily stuff zucchini, eggplant, carrots, pineapple, asparagus, cherry tomatoes or corn on skewers.
You can use chicken leg meat, turkey fillet or tofu. It is best to marinate the meat overnight, but if you do not have time, marinate it for at least 2 hours.
Remember not to cut the vegetables too thin so that they do not break when impaled on a stick, or too thick so that they have time to bake. Slices of zucchini, onion or other vegetables should be about 1 cm thick. Cut the meat into 2x2x2 cm cubes. It is worth making sure that the pieces of meat on the skewers are of similar size, thanks to which they will cook evenly. And no one will come across a raw or dry bite.
If you’re using wooden skewers, it’s a good idea to soak them in water for a few minutes before using them. Thanks to this, you will avoid burning the sticks during grilling.
What to serve skewers with? They taste great on their own, but you can prepare a sauce based on yogurt, e.g. garlic, or eat them with ketchup. Garlic bread also goes well with them.

- ½ cup ketchup
- 1 tbsp mustard
- ½ cup honey

Marinade
- Marinate the meat the day before. In a bowl, mix all the marinade ingredients (squeeze the juice from the lemon). Add the diced meet to the marinade. Rub the chicken thoroughly with the marinade. - Remove the seeds from the pepper and cut it into thick cubes. Cut the mushrooms in half (you don't need to peel them). Slice the onions into thick slices. Thread the sticks alternately with meat – 2 pieces of peppers – ½ mushroom – 1 slice of onion – meat – and so alternate. Stuff tightly because vegetables and meat will shrink while grilling. Preheat the oven to 392 °F (200 ° C), put the tray with skewers and bake for 30-35 minutes.You can also prepare skewers without sticks.
