Butter chicken – Chicken in creamy tomato sauce
Indian Butter chicken, or chicken in a creamy tomato sauce, is a real gem among Indian cuisine. It is a delicious combination of juicy chicken marinated in yogurt with spices such as garam masala, garlic and ginger, and a thick, sweet and sour sauce.
And what makes this sauce so special? Of course, ground cashew nuts, which fantastically thicken the sauce, giving it a unique character. Without a doubt there would be no BUTTER chicken without butter, which provides both flavor and creaminess. The sauce is definitely not dietetic, but delicious, aromatic and creamy – just YUM!

Ingredients
Marinade
- 1 chicken breast
- 180 g yogurt
- 1 tsp garam masala
- salt
- pepper
- 3 cm ginger
- 2 cloves garlic
Sauce
- 1 onion
- 2 tsp garam masala
- 25 g butter
- 75 ml heavy cream
- 500 ml tomato passata
- 1 tsp sweet paprika
- parsley (or cilantro)
- 2 tsp curry
- ½ tsp hot paprika
- 250 ml broth
- 65 g cashew nuts
- 1 tsp oil
Instructions
- Dice the chicken breast. Put it in a bowl and add chopped ginger and garlic. Then add yogurt, garam masala, salt and pepper. Mix thoroughly, cover and refrigerate for at least 30 minutes.1 chicken breast, 180 g yogurt, 1 tsp garam masala, salt, pepper
- Chop the onion. Grind cashew nuts. Chop the parsley.Put garam masala, curry, sweet and hot peppers into a hot deep frying pan / wok / pot. Stir and add a little oil. Fry the chopped onion with spices. Add the chicken with the marinade to the fried onion. After a few minutes, when the chicken is fried, add the ground cashew nuts and tomato passata. Mix. Then add the broth, cover and cook for a few minutes. Now add cream and butter. Mix and that's it! Sprinkle parsley on top.
