Stuffed Zucchini Boats Recipe

Ingredients
 
 

  • 3 zucchinis
  • 400 g minced beef (can be any, such as turkey)
  • 250 g red beans
  • 165 g canned corn
  • 1 red bell pepper
  • 500 g passata puree
  • 1 red onion
  • 2 cloves garlic
  • 120 g cheese
  • 1 tbsp oil

Spices

  • 1 tsp paprika
  • 1 tsp marjoram
  • 1 tsp oregano
  • ½ tsp tarragon
  • 1 tsp nutmeg
  • 1 tsp parsley
  • 1 tsp lovage
  • 1 tsp chilli powder
  • 1 tsp Mexican seasoning
  • pinch salt
  • pinch pepper

Instructions
 

  • Cut the zucchini in half and remove the seeds. Then sprinkle with salt and set aside for a few minutes.

  • Meanwhile, dice the onion and pepper.

  • Pour oil into the heated pan. Fry the onion with paprika and salt, then add the garlic. Add meat, spices and fry.
    400 g minced beef, 2 cloves garlic, 1 tbsp oil, 1 tsp paprika, 1 tsp marjoram, 1 tsp oregano, ½ tsp tarragon, 1 tsp nutmeg, 1 tsp parsley, 1 tsp chilli powder, 1 tsp Mexican seasoning, 1 tsp lovage
  • Then add pepper, beans, corn and tomatoes. Season with salt and pepper, fry.
    250 g red beans, 165 g canned corn, 500 g passata puree, pinch pepper
  • Dry the zucchini (the zucchini should be wet because of the salt) then stuff the zucchini. Grate the cheese and sprinkle the zucchini with it.
    Put in a preheated oven to with fan assisted mode350 °F for 20 minutes and done.
    120 g cheese
