Recipe for butter-almond cookies in the shape of rabbits with a fluffy tail made of Raffaello and a white chocolate coating

These sweet white bunnies perfectly fit into the atmosphere of Easter, and they will be a nice addition to the basket. Just a few ingredients: sugar, butter, flour, almonds, egg yolk and 20 minutes to bake these super easy cookies. A great recipe for last minute dessert or a quick snack. Perfect for fans of coconut-almond candies.

Almond Rafaello Bunnies Recipe

Ingredients
 
 

  • 100 g powdered sugar
  • 100 g butter
  • 100 g flour
  • 80 g ground almonds
  • 1 egg yolk
  • 2 tbsp cold water
  • salt
  • 200 g white chocolate
  • 15 candies Raffaello

Instructions
 

  • Mix all the ingredients for the dough together. You can use a mixer or knead the dough by hand. Knead the dough only to combine the ingredients. Wrap the finished dough in cling foil and put it in the freezer for about 30 minutes.
    100 g powdered sugar, 100 g butter, 100 g flour, 80 g ground almonds, 1 egg yolk, 2 tbsp cold water, salt
  • Remove the dough from the freezer and roll out to a thickness of about 3-4 mm. Cut bunnies out of the cake and put it on a baking sheet lined with baking paper. Bake the cookies in an oven preheated to conventional heating338 °F for about 10 minutes until they are lightly browned.
  • Prepare the chocolate glaze. Melt 200 g of white chocolate in the microwave or in a water bath. Drizzle cooled cookies with chocolate. Place a halved Rafaello on top of each cookie at the tail. Wait for the icing to harden on the cookies, you can also put them in the fridge. When the icing sets, the cookies are ready to eat. Enjoy!
