Raffaello Bunnies – Almond Cookies
Almond Rafaello Bunnies Recipe
- 100 g powdered sugar
- 100 g butter
- 100 g flour
- 80 g ground almonds
- 1 egg yolk
- 2 tbsp cold water
- 200 g white chocolate
- 15 candies Raffaello
- Mix all the ingredients for the dough together. You can use a mixer or knead the dough by hand. Knead the dough only to combine the ingredients. Wrap the finished dough in cling foil and put it in the freezer for about 30 minutes.100 g powdered sugar, 100 g butter, 100 g flour, 80 g ground almonds, 1 egg yolk, 2 tbsp cold water, salt
- Remove the dough from the freezer and roll out to a thickness of about 3-4 mm. Cut bunnies out of the cake and put it on a baking sheet lined with baking paper. Bake the cookies in an oven preheated to 338 °F for about 10 minutes until they are lightly browned.
- Prepare the chocolate glaze. Melt 200 g of white chocolate in the microwave or in a water bath. Drizzle cooled cookies with chocolate. Place a halved Rafaello on top of each cookie at the tail.
