Mushroom Bruschetta with Gruyere and Thyme

Roasted mushrooms bruchetta

Quick and easy wild mushroom on baguette or sourdough bread baked with Gruyère cheese or maybe Parmesan? They will work well as an appetizer or snack, for a party or afternoon tea. They fit perfectly into the autumn climate. If you are looking for an idea for what to prepare with freshly picked mushrooms or those that have been lying around in the freezer, try these oven-baked sandwiches!

Recipe modifications:

  • You can replace Gruyère cheese with another aromatic cheese, e.g. Parmesan, Grana Padano, Pecorino Romano or even Cheddar. You can also use any other cheese that melts well.
  • You can replace the baguette with any bread, e.g. ciabatta or sourdough bread.
  • You can use both frozen and fresh mushrooms. I recommend bay boletes or boletus mushrooms the most. When using fresh mushrooms, remember to peel them, slice them and then boil them for 15-30 minutes, depending on the type of mushroom. Pour off the water after boiling the mushrooms. Boiling the mushrooms will make them more digestible and they will definitely not be bitter.

Mushroom Bruschetta Recipe

Ingredients
 
 

  • 250 g mushrooms
  • ½ baguette (or other bread)
  • 30 g gruyère cheese
  • ½ tbsp butter
  • 3 clove garlic
  • 100 ml dry white wine (optional)
  • 1 tsp honey
  • ½ tbsp soy sauce
  • 1 pinch thyme
  • olive oil
  • salt
  • pepper

Instructions
 

  • Slice the mushrooms. Grate the cheese. Cut the bread into slices.

  • If you use fresh mushrooms, you need to boil them for 15 minutes in unsalted water first.
    Pour a little olive oil into the pan. Fry the mushrooms with garlic. Pour in the wine and fry until the liquid evaporates. Season with soy sauce, pepper, salt and thyme. You can add a little honey. Finally, add the butter. Fry until the mushrooms are golden.

  • Spread olive oil or butter on the bread. Add the fried mushrooms and sprinkle with cheese. Bake for about 10 minutes at 200 °C (fan oven392 °F) until the cheese melts. Enjoy!
