Salty feta, crispy filo pastry, and sweet honey. This is one of those dishes I wasn’t convinced about until I tried it. Most importantly, use real Greek feta made from sheep’s milk, not a salad cheese made from cow’s milk. The flavor and texture are completely different, and Greek feta is now available in any supermarket! You can prepare one large cube of feta baked in pastry – perfect for one person or divide the feta into smaller pieces and individually wrap each in pastry – a great option for a party.

How to make feta in pastry?
You don’t have to use the oven! You can also fry the feta in filo pastry in a pan. Simply wrap the feta in buttered filo pastry and place in a hot pan. Cook until golden brown on all sides, and it’s ready!

Can you bake feta cheese in puff pastry?
Of course! There’s no need to butter the dough when using puff pastry. However, filo pastry is definitely crispier and flakier, and feta cheese in filo pastry tastes much better than in puff pastry.

What to serve feta in pastry with?
Besides honey and sesame seeds, orange or fig jam are great with feta in pastry. You can also use more Polish flavors, such as cranberries or apricot jam. If you don’t like the combination of sweet and salty flavors, this baked feta is delicious on its own or as one of many appetizers (meze), such as with Greek stew (Bekri meze) or grilled vegetables. Thyme or parsley pair well with baked feta. Baked feta tastes best warm, served immediately after baking.

For a 200g piece of feta, two sheets of filo pastry are sufficient. You can use the remaining dough, for example, to make an orange cake.
The following proportions make two portions of feta with honey, approximately 140 g each, or several smaller portions of baked feta.

Feta Saganaki Recipe

Ingredients
 
 

  • 200 g feta cheese (1 cube)
  • 2 sheets filo pastry (about 80 g)
  • 1 tbsp butter (melted)
  • 2 tbsp honey (liquid)
  • 1 tsp sesame seeds

Instructions
 

  • You can bake the feta in one large piece or several smaller pieces, depending on whether you're serving one, two, or several people.
    Example for two people:
    Cut the feta in half. Spread half of a sheet of filo pastry with butter and fold it in half along the long side. Wrap the feta piece in the pastry and brush the top with butter. Repeat with the second piece.
    200 g feta cheese, 2 sheets filo pastry, 1 tbsp butter
  • Place the wrapped feta in an oven preheated to 200 °C (upper and lower heater392 °F) and bake for approximately 10 minutes until golden brown.
  • Place the baked feta on a plate, drizzle with honey, and sprinkle with sesame seeds. Enjoy!
