Baked Salmon with Leeks
Delicious, juicy salmon in a delicate creamy wine sauce with roasted leeks. It sounds exquisite, but it’s incredibly easy to prepare. You don’t need any spices or herbs that would only overshadow the salmon’s flavor. Fish prepared in an ovenproof dish is perfect for a holiday table, a romantic dinner, or a quick meal. This is an extremely simple and delicious dish!
I recommend portioning the fish before baking. Cutting it into smaller pieces will ensure even cooking inside and significantly shorten the baking time.
Recipe modifications:
- Salmon: You can use a fillet or steak cut. You can also substitute the salmon with another fish, such as halibut. You can also choose lean fish like cod, hoki or pollock. If you prefer, you can also bake chicken, e.g. breast, in the leeks, but it’s best to brown it in a pan first to keep the meat juicy.
- Leek: In addition to or instead of leek, you can add other vegetables, such as fennel, carrots, sweet potatoes, or potatoes. When adding potatoes, it’s a good idea to pre-cook them so they’re not raw, as the fish only bakes for 15 minutes!
The following proportions make approximately 4 servings of 195g salmon in a creamy sauce with leeks.

Ingredients
- 500 g salmon
- 1 big leek
- 1 clove garlic
- 50 g butter
- 100 ml heavy cream
- 100 ml white wine
- salt
Instructions
- Wash, pat dry, and cut the salmon into portions. Slice the leek into slices about 1 cm thick.500 g salmon, 1 big leek
